15 Minute Sweet and Spicy Beef

 

I've spent the last few days completely bed-ridden due to a stomach bug. It's been one of those, "I have so many things to do but don't even care because all I can do is lay here motionless and listen to Parks and Rec because watching it is a little too much" kind of sick spells. Well ... I'm slowly getting my appetite & energy back and I'm here to share a fantastic recipe collab with Sprouts that I did last week.

They had a specific challenge of creating a recipe with their quality beef that can be made in just 15 minutes. Their beef is always fresh (never frozen), and fresh batches are made daily.  I'm all for quick and easy recipes so this was a no brainer. I've been incredibly inspired recently by asian flavors: the tang, the spice, the umami and flavorful complexity. This marinade is full of these flavors, and doubles as a delicious sauce that finishes off the dish. You can use this sweet and spicy beef to liven up your stir fry, or just serve on a warm bed of rice. Add more sriracha or red chiles for an extra kick.

 
 

15-MinuteSweet & Spicy Beef

Ingredients

1lb Extra Lean Sprouts Loin Beef Strips
2 Tbsp. Sprouts Organic Soy Sauce
1 Tbsp Sprouts Avocado Oil
2 Tbsp. Fish Sauce
1 Tbsp. Sprouts Brown Sugar
1 tsp. Sriracha
2 tsp. Sprouts Rice Vinegar
1 tsp. Lime Zest
Juice from ½ lime
2 large Garlic Cloves, minced
1 Tbsp. Cilantro, minced, plus more for garnish
1 Tbsp. Unsalted Butter
Sesame seeds for garnish

Instructions

  1. Whisk together soy sauce, avocado oil, fish sauce, brown sugar, sriracha, rice vinegar, lime zest, lime juice, minced garlic cloves and minced ginger in medium bowl.

  2. Add beef strips to marinade and let sit for 5 minutes.

  3. While beef is marinading set a large wok or cast iron skillet over medium high heat with a few tablespoons of avocado oil. Let pan get very hot.

  4. Remove beef from marinade, and place in hot pan, reserving the rest of the marinade for later.

  5. Cook beef until browned on all sides. Remove from pan, set aside and pour marinade into hot pan. Cook over medium high heat, stirring constantly, until mixture is very thick and reduced by about half.

  6. Off heat stir in 1T butter and 1 Tbsp. Cilantro.

  7. Plate beef and pour sweet and spicy sauce mixture on top. Garnish with additional cilantro and sesame seeds.
