11 Minute Instant Pot Pasta Bolognese

 

The Instant Pot is like ... so hot right now. There are recipes ALL over the interwebs and Pinterest. Our roomie got one a while back, and I've been using it ever since. Rice, Chilli, brisket, broth, sweet potatoes. Got something that you want to cook fast? The Instant Pot can do it!

I've been playing around with mine and finally have a recipe for you. I've made this three or 4 times over the last 6 months as a super easy week night meal that tastes like it's been simmering for hours and hours. It has all of the classic bolognese ingredients (with the exception of all beef instead of a combo of beef/veal/pork) and cooks up in JUST 11 MINUTES. Using ingredients from Sprouts makes it super easy on your pocketbook too!

Easy Instant Pot Bolognese

Red Wine really does add a nice touch to this, but you can definitely exclude it if you don't have it on hand—just adjust the amount of water you add in step 4.

 
 

Ingredients

2T High Heat Oil
1 Small White Onion, diced
3 Cloves Garlic, minced
2 Carrots, Minced
2 Celery Ribs, Minced
1 Portabella Mushroom, Minced
¼c. Walnuts, Toasted & Finely Chopped
28 oz can Sprouts Crushed Tomatoes
2T Tomato Paste
1 lb Ground Beef
½c red wine
4T Heavy Cream
1 ½t Salt
½t Pepper
¼t Crushed Red Pepper
¼t. Dried Oregano
1 lb Sprouts Penne Pasta
1 cp water
1 cp grated Parmesan + more for serving

Instructions

  1. Set your instant pot to saute over highest setting & let it get hot for 5 minutes. Add oil & when shimmering, add onion, garlic, carrot and celery. Saute until softened, about 5 minutes.

  2. Add portabella and cook until they start to plump and release their liquid. Then add walnuts and beef, making sure to break up the beef and mix together well.

  3. Add wine, cream, crushed tomatoes, tomato paste and spices and stir together until everything is incorporated.

  4. Add dried pasta & about 1 cup of water. You want to add just enough water for the pasta to absorb and perfectly cook. If you add too much the mixture will be soupy, since liquid doesn’t boil off in the instant pot.

  5. Secure the lid, set the valve to sealing, and set the instant pot to cook on Manual, High Pressure for 11 minutes. When it is done, use the quick release method to release the pressure. Remove the lid once you know the pressure has fully released.

  6. The mixture may look like it has excess liquid, but just give it a good stir to distribute. Stir in grated parmesan & taste test to add any additional seasoning.

  7. Serve with additional parmesan.
